Easy Turkey Taco Soup
I’m sharing one of my quick, easy and oh so YUMMY recipes that I made all the time while in college and that has came in very handy for those last minute dinner ideas now. BONUS most of the ingredients we usually keep on hand. Try it out and let me know what you think! You can do ground beef or no meat at all too, both turn out wonderful!
Ingredients:
*Please note I make mine with all organic canned foods and meat. However we just recently switched to all organic this last year and before that it was whatever was on sale, the taste is still the same and will leave you with a nice warm and full belly.
1 can black beans
1 can red kidney beans
1 can chili beans-sometimes these can be hard to find so substitute with any other kind of bean you like or double up the black or kidney.
1 can corn
1 can of diced tomatoes
2 (10 ounce) cans of red enchilada sauce
1 packet of taco seasoning
1 pound ground turkey
Crock pot:
Brown ground turkey (or beef) toss in crock pot.
Open and drain beans, corn, tomatoes and add to crock pot.
Add the enchilada sauce and taco seasoning to crock pot.
Mix and cook on low for 6-8 hours.
If you want to enjoy it sooner do everything the same and put in crock pot for 2 hours on high or in a big pot on the stove top till hot.
You can add shredded cheese and sour cream on top and eat it with a spoon. Or do what I do and use salsa chips to enjoy every last bite!
I made the quick version last night after a long day so I could throw it all together and relax a bit of the sofa.
